    Regarding story #1, this is appears to be an epidemiological study, not a mechanical one. I think a stronger interpretation of the date (stronger that is than "nitrates cause Alzheimer's") works like this:

    1. Nitrates are found in foods loaded up with preservatives.
    2. Foods with preservatives are the most-processed foods in the store, and thereby the most lacking in nutrition.
    3. Eating low-nutrition foods all your life leads to metabolic disorders like Alzheimer's, diabetes mellitus and Parkinson's.

    A better proscription would be: buy fresh, unprocessed (raw) foods at the grocery store and cook them at home. If you can get organic, locally grown, picked-when-ripe, grass-fed, etc. foods, bonus. The more nutrition, and the closer it is to how food occurs in nature, the better.

    The real cuplrit for diabetes and Alzheimers may more likely be MSG in the diet. It was in the 1960s that MSG consumption in North America first took off and if you check out the literature you will find that the food ingredient is suspected of causing many and serious health problems, including brain lesions from hyperactivating neurons to the point of killing them. Of course the health concerns could result from a combination of both causes among others not yet identified.
